1st Batch- founding to Store Shelf

Wow, actually did it.
The amount of setbacks were silly. From the community roaster breaking down multiple times, to delayed shipments, to my own stepping into the unknown.
Despite it all, the very first roast made it to a store shelf and sold out from here too! Incredible.

Thanks for the support, honestly it’s pretty astounding.

I am quite pleased with the roast, the smell alone of these beans is dreamy.

However it is shocking how it turned out in a sense. None of the producers/farmers tasting notes, nor the ones the importer gave match what I got out of the coffee. Still a success but a headscratcher too.

Initially I had a different name in mind, upon first cupping the brightness was outstanding, truly. It was downright impressive in how citrussy it was. The week after, ‘cranberries’, both the juice and tartness as well as the sweetness of them dried.

My name for this batch was ‘Sucker punch’ with how it hit you, still nice but what a whack of flavour. Yet here it turned out. Clean, darker fruits, citrus but tad sweet and bitter too. Pleasant. Genuinely a pleasant cup.

I realize I need to do more social media, introduce who I am, philosophy, brew recipes for how to make this and more but sheesh my admiration for those that can juggle all this grew.

I jokingly say I’d do alright with the brewers cup (taste similar coffees, find the odd one out, progress, repeat), but I still have a long way to go, though I am getting better. Definitely have a nose more refined than my tongue but it does impress people so maybe there’s a natural knack there.
Anywho, I made this cup and will be making it for a video, have to learn how to animate more(how laborious), and have to keep roasting and finding more coffees to make.

This cup after letting it cool down for a few minutes(I find right out of the gate, it’s a touch too hot and it almost mutes the sweet, bright, niceness of it), leaves me smiling and coming back for more.
This second batch, I tweaked the recipe (roast profile-how the beans get cooked in the roaster). I went low and slow and the promise it shows is nuts! So Sweet, so Good, Great Body, Absolutely Beautiful.

Maybe there’s a knack there too but I have a long way to go. I see it as bringing out the beauty of the beans so as thanks a bag of the coffee was sent to Maria Delgado thanks to the kindness of Apex Importers who I sourced the beans from. They’re visiting her this summer so I’m excited to hear back then.

Anyways lots more to say but I’ll have to schedule to get better at this and keep the regularity.
Thanks for reading and feel free to shoot me a message for what you thought of the coffee, what you’d like to see next or any other things!

(I have to tune up a 1980s Gaggia Espresso machine. Courtesy of my Dad, Thanks Dad!)

Can’t wait to show what’s in store and what’s possible!

OH I also have to formerly introduce Shiro and Kuro to you all!

Stay tuned and enjoy what’s to come

Sincerely,

Phillip!
